Sugar Substitutes? Answered

Besides the ongoing debate regarding the need to reduce sugars in a drive to reduce obesity, sugars should not be consumed by diabetics unless during a hypoglycaemic episode.

There are many sugar substitutes eg Fructose, Aspartame, Saccharine, Maltitol yet very scant information on how best these can be used, alone or in combination, in baking or making of particular sweets like Turkish Helva that needs to have a characteristic texture.

It would be nice to have some information and guidelines for those wanting to cut down the calories or who cannot consume sugars because of illness.
