Sugar or no sugar? Answered

I'm on the first month of a new diet my wife and I are trying, ketogenic diet. This is a low carb diet and thus, the greatest hurdle to go thru. There are a lot of options out there for baked goods but all require artificial sweeteners, which I absolutely despite, to the point that I rather go sugarless. Now I ask: is sugar an ABSOLUTE necessity when baking, and how would not adding sugar affect the baked good being made?
