What would be a good way to vary between 12V, 15 Amps and 0V, 0 Amps, gradually? Answered

 The power is coming from a battery, and so is DC and has nothing built in to vary it. For example, what potentiometers or the like could reliably handle it?

You have 3 options, depending on what you're powering. Pulse width modulation, voltage control, or current control.

A potentiometer that can handle that much power would be very large and very expensive.

Oh, my previous answer assumed DC current. If you're talking about AC current, then you could also use a thyristor or an SCR. Think dimmer switch.

This is a big 12V battery, and you want to run something between zero and ~200W?
What's good depends upon what it is, like other people have mentioned.

Depends a lot on what you are driving.

A potentiometer is out of the question, unless you want to waste 180 watts from your supply, and you could buy one anyway/

what are you powering? and why do you need to vary it?  This will directly affect the answer
