The mAh rating refers to the energy capacity of a battery, it's a unit that measures electrical power over time (Milliamp Hours). A higher value means that the battery will last longer. For example a 2000mAh battery could power a device that consumes 100mA for approximately 20 hours, a device consuming 200mA would last for 10 hours and so on.
More importantly you need to make sure that the battery meets the Voltage requirements of your device. Over-voltage or under-voltage outside of the tolerance range of your phone could result in it not working and/or being damaged.
