If you use coal make sure no fumes will get on the tomatoes or you will die, way to many toxic elements in coal.

I've never used coal but have dried tomatoes. To dry veg's. you need low heat, air circulation and time. I'm not sure how low you can make a coal fire. Most dehydrators like the models you set on a cabinet top and plug in don't reach 120 deg. F. AFAIK. I've got one and it's never gotten more than warm to the touch.
