Say more about when and how you use the controls.

Do you plan to use them at the same time with possible contradictory signals ?

Possibly - i assume indoor flight - out doors there will be a lot of external IR to interfere. You should modulate the IR signal.

You will need to ENSURE reception from all round the air craft,

Easier to use traditional RF system

Yes you can build it like that, But I'd stick with RF for the same reasons
