Intro: Fried Polenta

Fried polenta tastes AMAZING. It's one of the best fried foods out there as far as I'm concerned. Frying polenta gives it a chewy and crunchy outside, while the inside stays nice and creamy. It's perfect served with marinara sauce on the side!

Ingredients:
  • one batch of homemade polenta, cooled and cut into slices.
  • olive or vegetable oil for frying
  • sauce for dipping
Method:
  1. Cut your cooled polenta into slices 1/2 inch thick - make them as pretty or simple as you want!
  2. Heat about a 1/4-1/2 inch of oil in a small frying pan until it's nice and hot and starting to smoke.
  3. Add in your polenta slices without crowding them and fry for 3-5 minutes on each side.
  4. Remove from the pan and drain on paper towels.
  5. DEVOUR

Keep in mind that the polenta will stick to the bottom of the pan and everything else if the oil isn't hot enough. It's best to use a nice stainless steel spatula for flipping - one with a really thin edge. That way you can slowly work it under the pieces of polenta without destroying their crispy crust. :D

I made it! tastes really great and can easily go with anything or be a quick appetiser. Unfortunately i don't have any pictures to upload apart from an empty plate because we just ate em all !!

Have you ever used an Airfryer.. so you get all the crispiness without all the bad oils? I'm actually going out today to buy one and see if it works with Polenta.. Oh why do they call it polenta when all it is is cornmeal..what happened to cornbread?lol

Yes, you can get it pre-made but it is much better if you make it yourself. Alton Brown has a really solid and easy polenta recipe. Saute onions and garlic in olive oil, add a quart of chicken stock and bring to a boil... then slowly wisk in 1 cup of cornmeal (I like to use a pretty fine stone ground variety from the itallian grocery.) Throw that in the oven for about 40 mins... taking it out to stir every 10. Then mik in a couple ounces of parm cheese and 3 T of butter, Mmmm you can just eat it like that ... or you can chill it and fry it up like this instruct able.
It's a kind of a corn paste from Italy I think. You see it at the stores sold as these logs wrapped in plastic. My parents used to slice them into wedges and grill them. Delicious.
That looks so good with the sauce... I'll have to buy polenta and try it myself. :)
This is AWSOME! we eat fried polenta a lot in Brasil, but until I saw this I had forgotten to add to my menus. Thank you for posting.
