Introduction: Grilled Meat Wheels

Summertime to me means barbecue and anything barbecue is awesome! These tasty grilled appys are a great way to satisfy your guests, follow along and make your own grilled meat wheels!

I've dabbled with grilled meats before but this time wanted to share a different way to serve a grilled meat canapé. These rolled barbecued goodies are a great snack to serve your hungry guests while they are waiting for the rest of their BBQ fare to be cooked, and best of all it's served on a stick!

This recipe can be adapted to suit any type of meat or flexible vegetable (like thinly sliced eggplants, zucchini, turnips or carrots), and can be stuffed with almost any type of filling (provided at can stay inside the roll).

Enough talk, let's grill!

Step 1: Ingredients

This recipe uses flank steak as it is very thin, along with bacon, onion and spices.

But flank steak isn't the only type of meat this will work with, this recipe can be easily modified to accommodate a wide variety of meat types and ingredients which to include with them. Thin cuts of chicken, pork or other types of beef can be used, either by filleting the cut or tenderizing the meat so it's about 6mm (1/4").
Also, veggies. You can easily substitute the meat in this recipe to use thinly cut slices of eggplant, zucchini or other flesh, bendy, flexible vegetable. 6mm(1/4") thickness, same as meat.

  • flank steak
  • white onion
  • bacon
  • herbs+spices
  • BBQ skewers
  • sharp knife
  • cutting board
Remix all the above ingredients to make your own.

Step 2: Prep. Food

If you're using bamboo barbecue skewers then start by immersing them in water to make sure they don't burn when they go on the grill.
Depending on the meat you choose and it's thickness you may have to fillet your cut or pound to tenderize and flatten to a thinner cut. To tenderize meat simply sandwich meat between sheets of wax or parchment paper and pound with meat tenderizer until about 6mm (1/4") thick.  For vegetables, cut lengthwise and create 6mm(1/4") thick slices.

Wheel - Meat (or chicken, pork, eggplant, zucchini):
Cut flattened slices into 12mm (1/2") thin strips.
Season as desired.

Filling - Onions (or asparagus, roasted red peppers, pesto):
Peel onion then cut off one end, continue cutting 6mm (1/4") thick slices.
After cutting, separate each slice into individual rings.

Bacon (optional):
oh just keep being delicious and amazing.

Step 3: Picture Me Rollin'

Depending on your wheel and filling ingredients rolling the wheels an be a slippery process, for the wheels shown here layer bacon and onion on top of steak strips then roll into a wheel and spike with a skewer to hold in place.

Repeat rolling and skewering until you run out of meat.

Alternatively you can roll the wheel and the filling as one large roll, skewer then cut into sections afterward. It all depends on your ingredients.

Step 4: Grill

Time to grill!
Put your meat wheels on with the rest of your BBQ goodies. On my grill I had steaks, grilled veggies (mushrooms, onions, corn and peppers), with the meat wheels being put up front.

If you have a hotter spot on your grill place the meat wheels here. Due to their size the meat wheels may cook pretty quick, so keep an eye on them. Once the meat and filling has been cooked remove from heat. Continue cooking remainder of food as normal.

Step 5: Serve!

Serve out the grilled meat wheels to your guests while they are waiting for their meals to finish cooking on the grill. This should satiate the hungry masses until dinner time is ready, maybe even buy you some time to grab another frosty beverage before flipping the goodies on the grill.
