I know what you are thinking, Another Apple Pie recipe? ugh... But did you know that Apple Pie is American's favorite type of Pie! Sadly it is not the favorite "π" of the Greeks, if you can find Μιλοπιτα (Apple Pie) in Greece it is normally like the kind they serve at McDonalds, not that anything is wrong with that, but I love a deep dish Apple Pie and so do my kids, especially with a big scoop of vanilla ice-cream!

The recipe numbers are π because they either start with a 3, 1 or 4, FUN right?

The double crust pie recipe is a version of what my Aunt Jeanie wrote in the cookbook that my Grandmother published, my sweet tooth is totally genetic, I blame them.

Speaking of sweet tooth, if you are having a party and you have someone coming over that is diabetic or suffering from Celiac disease then you might want to make them one of my Apple Pie Keto Bites, so they don't feel left out of the Apple Pie takings.

Supplies:

Step 1: Recipe

All you need are Apples! The rest I am sure you have in your pantry, easy peasy.

Double Cookie Crust:

3. Cups of All Purpose Flour

1 tsp. of Salt

4 Tbs. White Castor Sugar

3. Tbs. Sunflower Oil

1 Cup of Butter (diced)

4 Tbs. cold Water (may need slightly less)

Apple Filling:

3. Medium Sized Apples

1 Tbs. Lemon Juice

4 Tbs. All Purpose Flour

3. Medium Sized Apples (so a total of 6 Apples)

1 Tbs. Cinnamon

4 Tbs. Brown Sugar

3. tsp. butter

1 Egg

4 Tbs. White Sugar

Step 2: Double Crust Cookie Dough

Sift the 3 cups of Flour with the 1 tsp. of salt and 4 Tbs. of Sugar

Cube the 1 cup of butter and add to the Flour mixture, crumble it in, I start with a fork and make sure it is all crumbled in, then add the 3 Tbs. of Sunflower oil, mix in well.

Slowly add in 1 Tbs. of Cold water at a time, for this batch of dough I only need 3 1/2 Tbs. of Cold Water and not a full 4 Tbs. (sometimes you may need less or perhaps more, but all around 4 Tbs. of cold water)

Knead well, divide into 2 balls and flatten, place in saran wrap and place in the fridge for an hour or two.

Step 3: Prepare Apples

Peel 6 medium Apples, slice in half, then in quarters, cut out the core seeds and slice in even thin slices, mix in the 1 Tbs. of Lemon Juice.

Mix together the 4 Tbs. of Flour, 4 Tbs. of Brown Sugar, 4 Tbs. of Sugar and 1 Tbs. of Cinnamon together and then pour the dry mixture into the Apples and toss well.

Step 4: Putting It All Together

Preheat oven to 425degrees F

The pastry dough is like cookie dough, you can roll it out or your can press it into your 9" pie pan.

Add Apple Pie filling

Let's make some circles! π is all about the circle right, take the other half of the crust dough and roll it out, the diameter of the circle cutter is 1 1/2". π=C/d

Put the first one in the middle and then add around, see the 4th picture, once you fill the whole pie, cut out a few more circles and cut those along the diameter to line the sides, see picture 5, press these around the edges.

Dot the top of the pie with the 3 tsp. of butter, I pushed them in between the circle cracks.

Make the Egg wash, use a whole egg* and whisk it with a splash of cold water, then use a pastry brush to brush the egg on all of the circles and along the edge of the pie.

Place the pie in the oven Bake at 425 for 10 minutes, then turn the oven down to 350 and bake for another 50 minutes, if the top begins to brown to much cover with foil.

*Tip: Use a whole egg, if you use only the white it will only promote browning, but adding the yolk will also provide a nice glossy shine to the pastry crust.

Step 5: Eat and Enjoy

Add a scoop of Ice-Cream and Enjoy

My son came in the kitchen and said I didn't eat it all, hehehe, take a look at that last photo, I think he did a pretty good job :)
