APPLE PECAN CAKE WITH CARAMEL GLAZE

The fall is a great time of year for this cake, actually, any time of year is a great time to have it. It is easy to make and delicious.

Step 1: Gather All the Ingredients

you will need a medium and a large bowl along with a tube pan or you can use two bread pans.

with these, you will need the following:

1½ cups of cooking oil

2 cups sugar

4 Eggs

3 cups of flour

1 tsp baking soda

½ tsp cinnamon

1 tsp salt

2 tsps vanilla

3½ cups Granny Smith apples (approximately 3-4 apples), peeled and chopped

1 cup of chopped pecans ... I always bake the nuts at 350° for five minutes, besides smelling good, I think the flavor is better

for the caramel glaze you will need :

1 cup granulated sugar

1 tablespoon water

4 tablespoons unsalted butter (1/2 stick)

1/2 cup heavy cream

Step 2: Lets Get Started

Preheat oven to 325° f

In a large mixing bowl, add oil, sugar and eggs, mix until nice and creamy

Step 3:

in a medium mixing bowl, whisk together flour, baking soda, cinnamon and salt

add to large bowl, mix well

add vanilla, mix well

stir in apples and pecans

Step 4:

pour into generously greased and floured tube pan..I use cocoa instead of flour, it looks nicer and who doesn't like chocolate??

Step 5:

bake at 325° for approximately 1 hour. check using a tooth pick at about 50 minutes, and if it comes out clean, then your cake is done. If using the loaf pans, make sure to check it at about 50 minutes as well

Step 6: Time to Make the Caramel Glaze

stir together the sugar and water in a small saucepan.place over medium-high heat and bring to a boil. let boil until the mixture turns amber in color, about 3 minutes.immediately add the butter and stir to incorporate. remove from heat, add the cream, and mix well. set aside and let cool to room temperature.

when the caramel has reached temp, pour it over the cake ..as you can see here , I got a little rushed and didn't wait quite long enough before pouring the glaze but it still tastes great

    Is 1 1/2 cups of oil correct. I never saw a recipe for cake with that much. I want to make it and I want to be sure.
