This Apple Pie recipe is absolutely delicious and easy to make. It´s perfect for Thanksgiving or wintertime. A warm apple pie with ice cream or date caramel on top tastes heavenly. You definitely have to try this combination. I made a pie crust as well as a cinnamon apple filling. This recipe is vegan, comforting and so good.

Step 1: Make the Pie Crust

Cut chilled butter into pieces and finely grind walnuts in a mortar. Then mix walnuts, spelt flour, sugar, and salt in a bowl. Add the chopped butter and knead everything with your hands to a crumbly mixture. Then add the water to make the dough smooth and easy to shape. Form the dough into a ball. Wrap the dough in a foil and let it rest in the fridge for about half an hour.

Step 2: Make the Apple Filling and Date Caramel

For the caramel, put the dates with water and sea salt in a blender. Mix everything together to a smooth mixture. Put your apple slices in a mixing bowl and mix them with brown sugar, some date caramel, vanilla extract, lemon zest, lemon juice, cinnamon, Pumpkin Spice and flour.

Step 3: Make the Grid Pattern

Cut the dough in half. Roll out one half on a floured surface so that it covers the pan. Place the dough in your pie pan and pierce several times with a fork. Then spread your apple filling on the cake base. Roll out the second half of the dough on a floured surface and cut the dough into strips. Now decorate your Apple Pie with the dough strips and use the rest of your dough to add more beautiful shapes. Spread some milk on the cake and then put the apple pie in the oven for about 45 – 50 minutes.
