Introduction: Applesauce Pumpkin Bread

It's October, everything pumpkin is upon us! To celebrate let's make a fun quick bread: applesauce pumpkin bread!

Step 1: What You Need From the Pantry:

Gather up these ingredients and get cooking!
1 cup white sugar
1/2 cup unsweetened applesauce
2 eggs
8oz pumpkin purée (fresh or canned)
1 3/4 cup wheat flour
1/2 teaspoon salt
1 teaspoon baking soda
1/4 teaspoon baking powder
1 1/2 teaspoon pumpkin pie spice (I use 1/2 teaspoon of each: cinnamon, nutmeg, and allspice)

Step 2: Prepare Your Pan and Oven!

Pre-heat your oven to 350* F and line a 9 inch load pan with two pieces of parchment paper lightly sprayed with cooking spray.
This will allow for easy removal from the pan after cooking!
Now grab your favorite mixing bowl and get mixing!

Step 3: It's Mixing Time!

Mix the sugar and applesauce until combined, stir in eggs one at a time, mix in the pumpkin.
On a paper plate or dry mat, combine the flour with the salt, baking soda and powder, as well as the spices. Mix slightly to make sure there's no sour soda clumps!
Pour the dry into the wet, 1/4th of the plate at a time, mix until just combined! The dough will be sticky and strong, this makes for a dense spongy bread, not a soggy bread.

Step 4: Pop That Pan in the Oven!

Bake at 350 for 60 minutes, insert a toothpick to check that it is done. A clean toothpick is exactly what you want!
Now leave it in the pan for 10 minutes, on the stovetop. When the 10 minutes are up, pull the bread out using the parchment paper, set it on a plate and allow to cool for another 45-60 minutes before cutting it.
I cut mine into about 1 inch slices and got 8 slices. I then sliced it down the middle length wise and got 16 beautiful 1x2 inch pieces!
