Introduction: Aromatic Chicken Dum Biryani

Chicken Dum Biryani is a popular South Asian main course dish. It is made with aromatic spices, rice and chicken.

Dum biryani comes in a layer of rice, chicken gravy/masala, mint & cilantro leaves, fried onion, fried cashews and raisins and a dash of saffron milk or yellow food color. The flavor of the biryani is rich and it tastes so great too.. My family like it a lot. Pls try it out, you ll love it..

Step 1: Ingredients

For making Chicken Masala/Curry

2 lb Chicken ( washed with fresh running water and pat dry it)

Whole garam masala ( 2 bayleaf, 2 cinnamon small stick, 1 star aniseed)

2 cup onion,chopped

1.5 cup tomato,chopped

1/2 cup cilantro and mint leaves, chopped

3 green chillies

3 tbsp ginger garlic paste

1 tbsp fennel seed powder

1 tbsp cumin seed powder

1 tsp chilli powder

1/2 tsp salt

1/2 tsp garam masala powder

1 tbsp lemon juice

2 tbsp oil

For making Fragrant rice:

2 cup of long gran rice / Basmati rice

Whole garam masala ( 2 bayleaf, 2 cinnamon small stick, 1 star aniseed)

1/2 tsp salt

5 to 6 cup of water

1 tbsp Ghee/clarified buter

For garnishing

1/2 cup Cashew

1/2 cup raisin

1 tbsp Ghee/clarified butter

1/2 cup onion, sliced

2 tbsp oil

1/2 cup cilantro and mint leaves, finely chopped

For putting in Dum:

1 big vessel ( oven safe)

Aluminium foil

Step 2: Prepare Garnishing

1. Heat ghee in small pan in medium flame. When the oil becomes hot, add cashew and raisin. Fry it until cashew turns to golden brown and raisin becomes puffy. Then take out the fried cashew and raisin from pan.

2. Add oil and onion in the same pan. fry till it turn to golden brown.

Step 3: Chicken Curry/Masala

1. Heat oil in big pan on medium flame, add whole garam masala in it.

2. Add ginger garlic paste into it and saute it for a minute.

3. Add onion and cook it turns to translucent.

4. Now add all the spice powders and salt. Mix well and cook for 2 minutes.

5. Add tomato and leaves, cook until it becomes soft.

6. Add chicken into it and mix until the spices coated well with the chicken.

7. Pour lemon juice, give a stir and close the lid and cook for 15 minutes.

8. After 15 minutes open the lid and cook another 10 minutes to attain thick gravy consistency.

Step 4: Fragrant Rice

1. Heat ghee in big vessel on medium heat, add whole garam masala into it.

2. When you get the aroma of whole garam masala, pour 5 cups of water and add salt in it.

3. Once it begins to boil , add basmathi rice.

4. cook uncovered until the rice is half cooked.

5. Drain water using colander / filter and keep the rice aside.

Step 5: Layer the Chicken Masala and Fragrant Rice

Preheat oven to 350 F

Take oven safe vessel ( I used Pyrex large mixing bowl) and layer the rice and chicken masala.

Start layering : rice at bottom, some chicken gravy over the rice, again layer rice on chicken gravy and cover the gravy with rice.

Step 6: Garnish and Put It in Dum

First garnish it with chopped leaves, then with fried onions and then with fried cashews and raisins.

Done garnishing. Now wrap the vessel with aluminum foil and keep the vessel in preheated oven.

Cook for 20 minutes.

Take out the vessel carefully from oven. It will be hot and heavy.

Serve immediately with egg and yogurt dip.
