One of my favorite things to eat is grilled cheese. Whats not to like; 2 slices of butter drenched bread grill to perfection with a couple of slices of cheese in the middle? Adding a couple of slices of bacon will most certainly take it up a notch.
2 slices of bread (I like the Italian style white bread)
2 slices of thick-cut peppered bacon
1 tsp of butter
2 slices of beefsteak tomatoes
Step 1: Step 1 - Cooking THE Bacon
I like my bacon extra crispy. But you're welcome to cook yours anyway you like.
Step 2: Step 2 - Butter Bread and Start Cooking
Lightly butter a piece of bread and place it on your skillet over medium low heat. Add 1 slice of cheese and 2 tomato slices.
Step 3: Step 3 - Add More Bacon and Cheese
Place 2 slices of bacon on the tomatoes and another slice of cheese. Butter another slice of bread and place it on top butter side up.
Step 4: Step 4 - Flip This Bad Boy
After cooking on one side for a couple of minutes flip sandwich and cook the other side.
Step 5: Step 5 - Finish Cooking and Cut
Cook for another minute of two and remove from the skillet. Cut sammich in half on a plate.
Step 6: Step 6 - Add Soup and Serve
Grilled cheese goes great with soup. I served mine with a bowl of potato bacon chowder. yum
