I had an extra zucchini from my zucchini noodle with pesto meal, so I decided to try the baked zucchini sticks recipe.
Step 1: Cut Zucchini
After washing the zucchini, I cut off the ends and cut it in half. I then sliced it into sticks.
Step 2: Prep & Preheat
Preheat oven to 425 degrees F and coat cooling rack with nonstick spray and set aside.
Step 3: Bread Crumbs & Eggs
One zucchini stick at a time, I dipped them in the egg, and then rolled them in the crumb mixture. Then I placed the zucchini sticks on the rack.
Step 4: Bake
Bake sticks for 20-25 minutes.
Step 5: Enjoy
I served them with a side of ranch and topped it all off with a bit of fresh parsley. They turned out pretty good :)
