My oldest son is a diabetic; and when he comes home to visit, I like to send him home with homemade baked goods and jams at the end of his visit. Since he is a diabetic and lives in a group home where they have rules on things like nuts, the homemade baked goods I send home with my son must be sugar free and nut free.
This is a low sugar, nut free, banana bread recipe, that makes 4 loaves 20 x 10 x 6.6 cm, (8 x 3.9 x 2.5 inch), I like to use disposable aluminum pans with clear lids for gifting.

Step 1: Ingredients & Supplies
Start by gathering the ingredients together.
1. 2 large bananas mashed
2. 4 eggs
3. 1 cup vegetable oil
4. 2/3 cup water
5. 3 1/2 cups all-purpose flour
6. 2 teaspoons baking soda
7. 1 1/2 teaspoons salt
8. 2 teaspoons vanilla
9. Olive oil
10. 3 cups Splenda or some other artificial sweetener, if you are not concerned about sugar content you can use white sugar.

Step 2: Mixing
The prep time to make the banana bread is 15 minutes so I put the oven on at 350⁰ F or 175⁰ C to preheat the oven.
In a large bowl I peel and mash the bananas; mix in the eggs, oil, water, sugar, and vanilla, then whisk until well blended.
When the wet ingredients are well blended whisk in the flour, baking soda, and salt.
Step 3: Baking
These aluminum pans are ideal for gifting; prepare the pans by coating the pans with olive oil using a brush, I find the bread falls out of the pans with ease when you coat them this way.
Pour the batter into the prepared pans; I like to use a ladle and count the ladles of batter in each of the pans. This batch should fill 4 pans to about half full, then check the oven to be sure it is up to heat.
Place the pans on the middle rack of the oven and bake for about 50 minutes to one hour in the preheated oven. The loaves are done when you can insert a toothpick in the center of the loaf and it comes out clean and dry.
Step 4: And Serve
Once baked let the loves cool on a rack, when the loves are cool you can put the clear plastic covers on the pans or you can glaze the loves and serve.
