Introduction: Banoffee Pie

Having a sweet temptation, I was searching everywhere, and that is when I found some whipped cream in my freezer.

The first thing to come in my mind was Banoffee Pie.

Banoffee, as its name says, is Banana + Toffee, added with some biscuit crumb base and whipped cream topping, and an optional chocolate layer. No cooking nor baking is needed, except for the toffee preparation; yet resulting in the most mouth melting yummy pie. So join me for this Pie making...

Step 1: Ingredients

For crust

225g Digestive type biscuit

100g butter

For Filling

450g condensed milk for the toffee

2-3 bananas

Lemon juice 1 tbspn

Melted chocolate / Chocolate syrup 50-100 g

450ml Whipped cream

Step 2: Prepare the Toffee

Remove the label of condensed milk.

In a pressure cooker boil, the condensed milk fully immersed in water for a whistle on max heat. Reduce to min heat for 20 minutes more. Then remove it from the heat and leave to cool & thicken.

When cooled open the lid and give a good stir. Our yummy yummy toffee is ready.

Step 3: Pie Crust

Take the biscuit in a ziplock bag. Remove the excess air and close it. Crumble by patting with a rolling pin. Add melted butter either into the ziplock bag or pie dish and mix well. Fill it up quite high around the edges to create the crust effect! Press down to help them stick, smooth off and place in the fridge to chill for 15 minutes. I make in a pie plate and also a 4" springform pan.

Step 4: Layering

When the crust hardens, pour the prepared toffee on top (Save a very small portion for decoration).

Layer it with bananas slices, mixed with lemon juice (optional, to stop bananas from changing its color).

Apply a thin layer of chocolate syrup or melted chocolate.

And pipe the top with whipped cream (leaving up to your creativity).

Lastly, decorate with some saved toffee and chocolate.
