For this muffin recipe you will need:
3-4 Bananas mashed
1 c. sugar
½ c. vegetable oil
2 c. flour
1 tsp. baking soda
½ tsp. salt

In a large bowl, Mash the bananas with the mixer. If they are too hard then use a fork or potato masher to mash them. Just make sure there aren't any big chunks of banana.
Next add 2 eggs, 1 cup of sugar, and 1/2 cup vegetable oil to the mashed bananas and mix together.
Then In a separate bowl, mix together 2 cups of flour, 1 teaspoon baking soda, and 1/2 teaspoon of salt. Next sift the dry mixture into the banana mixture. We do this to make sure there aren't any large clumps of flour and it also makes it much easier to mix.
Then, using a mixer mix the muffin mix until combined. Only mix until you can see no more flour. Next, add the batter to an muffin tin lined with cupcake liners filling about 1/2 way.
Lastly, after your oven is done preheating and your muffins are ready to bake, put them in the oven for 25-30 minutes or until done. When they are finished take them out of the oven and let them cool. Now you have delicious banana muffins to share with your friends and family.
