Blackberry Cornbread Muffins

In this instructable, I will show you how to make blackberry cornbread muffins.

Step 1: Ingredients

For this recipe, you will need:

2 c fresh blackberries

5 eggs

1 tsp salt

1 16 oz container light sour cream

1/2 c sugar

2 c self-rising white cornmeal

1/2 c melted butter

Step 2: Dry Ingredients

In one bowl, combine the cornmeal, salt and sugar together.

Step 3: Wet Ingredients

In another bowl, whisk together the sour cream, eggs and butter.

Step 4: Combine Mixtures

Mix the wet and dry ingredients together, just until they are combined.

Step 5: The Star of the Show

Stir in the blackberries.

Step 6: Get Out the Muffin Pan

Spray the muffin pan with non-stick cooking spray, then fill up each one half way with the blackberry cornbread mixture.

Step 7: Bake!

Bake in an oven that's been preheated to 450° for 25-30 minutes until golden and they pass the fork-poke in the center test.

Step 8: Cool!

Cool on a wire rack just for a couple of minutes before serving.

Step 9: Enjoy!

    I don't think I've head cornbread muffins that are anything but cornbread. These sound very tasty!

    Ohhhhhh yum! Those look fantastic. I've never had cornbread with fruit but it seems like a perfect combination :D
