Introduction: Blueberries Jubilee Cupcake

Cherries seem to be the only ones who get to have a jubilee, but there is no reason blueberries can't have a fire party if they want to...

This dessert of lemony cake, fresh blueberries and ice cream make a great finale to any summer picnic or BBQ!

Mixing bowl
Mixer
Cupcake pan
Saucepan
Wooden spoon
Pastry bag with 1/4" round tip

Cupcakes
1 cup white sugar
1 stick of butter
2 eggs
1 tsp vanilla extract
1 tsp lemon zest
1 1/2 cups all-purpose flour
2 tsp baking powder
1/2 cup almond milk
1 Tbs lemon juice
1/4 tsp salt

Cream sugar and butter.  Add all other ingredients and blend.  Fill cupcake pans and bake at 350oF for 25 - 30 minutes.

1/4 cup cognac + 1 tsp per cupcake
1/2 tsp vanilla

Nope, alcohol burns at a low temperature, so the plates should be safe...unless it is paper : )

Is there a reason why the blue piped icing is blue, but the rest is white? Just food coloring added before piping or what?

This looks awesome, definitely going to be trying it.
