These are some delicious breakfast burritos my mom has made for a long time. I decided to help her out and also learn how to do it myself while documenting it for all of you guys here on instructables. I hope you guys enjoy these burritos as much as me and my whole family do because they are extremely good!

Step 1: Ingredients
Now I want to say that throughout this whole instructable you will see double of what you probably want to do because we make a big batch and then freeze them and eat them for a few weeks. So I am going to list half of everything we used for you guys.
Taco seasoning mix
~1lb 4 cheese Mexican style blend shredded cheese
2-2.5lbs of potatoes
1 Bunch of cilantro
1 Pound of ground beef
1 Pound of ground turkey
2 Medium onions, or 1 large onion
6-8 Cloves of garlic
~20 Large burrito size tortillas
Remember everything shown is double what I listed because it's a little more simple for the first time to do the small batch. Now if you want to make a bigger batch then you can just easily double everything I've listed here.
Step 2: Preperation
So now you want to cut up all the potatoes and the onions, also chop up the garlic. As you can see in the picture that we already had the garlic chopped up in a frozen block next to some serrano peppers we decided to experiment with.
Step 3: Cooking
When all the onions are chopped up put some olive oil in a pan and saute the onions until they get brown. When they get nice and brown throw in the ground beef and turkey, also put in the garlic.
After doing that, wash the potatoes and then dry them to get ready for baking. Put the potatoes in a plastic bag and then put some oil and salt in with it and mix it all around in the bag. After the oil is good and spread around then you lay all the potatoes out on a baking sheet and spread them out so there aren't too many overlapping. Then put them in the oven for about 30 minutes, then check them and flip them and move them around and then put them in for about another 10-15 minutes depending on how brown you want them.
Now you want to get all of your eggs and crack em into a mixing bowl. Add some salt and pepper and mix it all up. Then put some butter in your pan and scramble up all the eggs.
Step 4: Cooking Cont.
Now that you got the meat mixed in with your onions, you want to add all of your spices into the mix. Put in the following:
1 package of taco seasoning
1 teaspoon of garlic powder
1 teaspoon of ground cumin
1 tablespoon of chili powder
1/2 teaspoon of salt (or salt to taste)
You want all this to simmer for about 20 minutes while stirring it occasionally. Once it's done put it into a big mixing bowl. While the meat cooks the Maillard Reaction is happening, which is caused by a chemical reaction between an amino acid and a reducing sugar. This reaction cause the meat to form different colors and flavors.
Once your eggs are all finished cooking, then add them into your big bowl with the meat.
When your potatoes are at a good brownness, then take them out and add them to your big mixing bowl.
Step 5: Mixing
First you want to chop up all of your cilantro and then add it into the bowl with everything else. Then start mixing it all together till everything is spread out pretty evenly.
Also now is the time that you want to heat up and cook all of your tortillas and make a nice big stack to bring over to your mixed ingredients.
You guys should have about half of what you see in the pictures.
Step 6: Making the Burrito
Now you just lay out your tortilla and take a nice big scoop of all the mixed ingredients and put it on the tortilla, then put some cheese on top of that and roll it all up and enjoy!
