Buckeye Buckaroos

Step 1: Step 1 - Ingredients

1 1/2 cups creamy peanut
1/2 cup butter, softened
1 teaspoon vanilla extract
4 cups sifted confectioners' sugar
6 ounces semi-sweet chocolate chips
2 tablespoons shortening

Step 2: Step 2 - Mix

In a medium bowl, mix peanut butter, butter, vanilla, and confectioners' sugar.
I used a mixer
Use hands to form a smooth stiff dough.
Shape into balls using 2 teaspoons of dough for each ball. .

Step 3: Step 3 Roll & Chillllll

Line a baking sheet with waxed paper

Take peanut better balls and place on prepared pan, and refrigerate for 30 mins

Step 4: Step 4 - Dip Into Chocolate

Melt shortening and chocolate together in a metal bowl over a pan of lightly simmering water. Stir occasionally until smooth, and remove from heat.

Remove balls from refrigerator.

Dip the balls into teh melted chocolate, I use tongs but a wooden toothpick inserted into the the balls will work well.
Dip into melted chocolate.
Return to wax paper, chocolate side down, and remove toothpick.

Step 5: Step 5 - Chillllll Out

After all the balls have been coated, refrigerate for 30 minutes to set.

Step 6: Step 6 - Done!
