Buttermilk Pancakes With Caramel Sauce and Strawberries

What better meal is there than pancakes for a lazy weekend breakfast?

If you've never made buttermilk pancakes before then you're really missing out! Using buttermilk instead of milk makes them so much lighter and fluffier, add a caramel sauce to that and some delicious strawberries and you have a breakfast to die for!

So get the whole family together to make this scrumptious brekkie!

Step 1: Ingredients

This recipe makes enough for about 5 or 6 servings.

  • 2 cups self raising flour
  • 1/2 cup sugar
  • 1 egg
  • 1 teaspoon vanilla essence
  • 600 ml Buttermilk

Caramel Sauce:
  • 2/3 cup thickened cream
  • 3/4 cup firmly packed brown sugar
  • 50 grams butter
  • 1 teaspoon vanilla essence
*Note that this caramel sauce freezes really well! So you can freeze any leftovers, and just reheat in the microwave anytime*

Step 2: Start Cooking!

Step 1.
Place the butter, cream, brown sugar and vanilla essence in a saucepan over low to medium heat.

Step 2.
Let the mixture simmer for about 5 minutes or so, stirring occasionally.

Step 3.
The caramel sauce is ready when it has thickened a bit (it should take about 5 - 10 minutes), it will also thicken up more as it cools.

Step 4.
Set it aside to cool, while you make the pancakes


Step 1.
Heat a non stick frying pan over a medium-high heat.

Step 2.
In a bowl mix the flour, sugar, egg and vanilla together. Then add the buttermilk, I used all 600 mls of it, but if you're doing a different quantity of the pancake mixture you might want to add a bit at a time, until you have the right consistency.

*Note that buttermilk has an acidic taste to it, if you taste the mixture before it's cooked, it doesn't taste very good, don't fear though! It tastes amazing once it's cooked! :)*

Step 3.
I like to use a bit of spray-on canola oil on the pan to make sure the pancakes don't stick, you could also use butter, but I find that this burns easily, and I have to use more of it.

Step 4.
Put spoonfuls of the pancake mixture into the pan, let them cook until bubbles start forming on the top, once there's a few bubble, flip them over and cook for the same amount of time on the other side.

Step 3: Time to Eat! YUMMY!

Now grab some pancakes, cover with caramel sauce, strawberries and cream, and enjoy!

    I'm in the UK, can I just substitute thickened cream for double cream? Or is it something very specific? (As far as I can see, thickened is only really in Australia.)

    Yep, you can substitute double cream. in Australia double cream is just a thicker version of thickened cream.
