Chewy Homemade Oatmeal Cookies

About: Hey y'all! My name is Lydia and I want to share my passion for cooking/baking with everyone!

Hey guys, today I want to show you how to make a easy and quite "basic" oatmeal cookie, you can dress this cookie up by adding nuts and raisin to it (I am one of those rare people that stays away from raisins). This cookie has a soft spot in my heart, not only is it soft and chewy but it is one of the first things that I made in my kitchen a little over a year ago after not having a kitchen for what felt like forever. It also has cinnamon inside so it gives this cookies a warm and cozy feeling, and it is perfect with a glass of milk. So if you want to make your own chewy oatmeal cookies, then follow the step by step guide below or watch the video tutorial here:

Step 1: Ingredients and Tools

  • 3 Tablespoons Coconut Oil
  • ½ Cup Sugar
  • ½ Tablespoon Molasses
  • ¼ Cup Honey
  • 1 Egg
  • 1 Tablespoon Water
  • ½ Cup all-purpose Flour
  • ¼ teaspoon Cinnamon
  • ½ teaspoon Salt
  • ¼ teaspoon Baking Soda
  • 1 ½ Cups Oatmeal

Step 2: Add Wet Ingredients

Make sure all your ingredients are at room temperature before starting this recipe.

Preheat oven at 350 degrees F

Prepare cookie sheets by lining them with parchment paper.

In a large bowl add in coconut oil, sugar, molasses, honey, egg, and water.

Step 3: Combine Wet Ingredients

Using a rubber spatula, stir all your wet ingredients until everything is combined.

Step 4: Combine Dry Ingredients

In separate bowl mix flour, cinnamon, salt, baking soda, and oatmeal together until everything is combined.

Step 5: Add Dry to Wet

Add dry ingredients to the wet ingredients. Mix well until everything is combined.

Step 6: Refrigerate

Cover bowl with plastic wrap and refrigerate for 30 mins. This will help the cookies stay together, otherwise they will spread apart too much when they are baking.

Step 7: Shape Cookies

Take the cookie batter out of the refrigerator. Using an ice cream scoop, scoop out cookies onto prepared cooking sheets. I used a 1.5 Tablespoon ice cream scoop but you can make the cookies as big or as small as you like just adjust the time so they bake properly. Also do not over crowd the cookie sheet because the cookies will spread out when baking.

Step 8: Flatten and Bake

Flatten each cookie slightly before putting the cookie sheets in the over. Bake 12-15 minutes. Take the cookies out and allow them to fully cool on a cooling rack.

Step 9: Enjoy!

Cool and enjoy with a glass of milk!
