Intro: Chicken Pesto Pasta
If you have any leftover roast chicken, save it and make this easy pasta recipe. It's delicious and filling and it's a one pot meal. This recipe is for one serving.
- 100 grams pasta
- 1 cooked chicken breast shredded
- 2 tablespoons pesto
First, remove the skin from the leftover roast chicken and shred it.
Boil your pasta. When it's almost cooked, remove the excess water, leaving just a bit in the pot and turn your heat to low. Add in the chicken and pesto and mix until it's heated through. Whilst mixing, you will notice that the water you left in the pot will prevent your pasta from drying out and will make a lovely thick sauce.
