Introduction: Chicken Soup With Potato Gnocchi

Here's an easy recipe for a hearty delicious soup made in a slow cooker.

Gnocchi (noh-kee) is a little Italian pasta dumpling made from a combination of semolina pasta and potato.

Serve this yummy soup at your next family gathering and you will get rave reviews!

Step 1: Ingredients

You will need the following:

1 tablespoon chopped or minced garlic

1/4 cup olive oil

2 cups peeled and sliced carrots

1-1/2 cups celery, strings removed and sliced

Cooked chicken- either the meat off of a rotisserie chicken or 2 cans

2 cans chicken broth

1 can cream of chicken soup

16 ounces frozen spinach

1/2 teaspoon salt

1/2 teaspoon black pepper

1 teaspoon Thyme

1 package dry onion soup mix

2 cups milk

1 pound potato gnocchi, you can find them in the pasta aisle.

Step 2: Vegetables and Broth

Turn slow cooker on low heat.

Add chopped garlic and 1/4 cup olive oil to the slow cooker.

Add the carrots and celery.

Pour in the chicken broth and cream of chicken soup.

Stir in 1 teaspoon dried thyme and 1/2 teaspoon salt and 1/2 teaspoon black pepper.

Step 3: Dry Onion Soup Mix

Add the dry onion soup mix and the frozen spinach.

Stir well.

Add the cooked chicken.

Step 4: Milk and Gnocchi

Stir in 2 cups of milk and the package of Gnocchi.

Stir well and cover.

Allow to cook on low for 3 hours.

Serve hot.
