Step 1: Ingredients
- 2 pieces chicken breast
- 1 onion
- 5 tomatoes
- 1 chipotle chili
- Chicken bouillon
- 1 medium Tomato puree (around 400 grams)
- 2 bay leaves
Step 2: Cook Chicken Breast
Use a pressure cooker. Add water and cook chicken breasts for around 20 minutes.
Step 3: Cook Onion in Oil
Slice the onion into thin cuts. Cook onion until it looks translucent.
Step 4: Prepare the Sauce
Blend tomatoes with chipotle chili and water.
Step 5: Cook Sauce
In a large saucepan add 2 tbsp oil. Add the sauce from the blender and the tomato puree; stir until the sauce boils.
Step 6: Mix Chicken, Onion and Sauce
Now that your sauce is ready you should add the onion and the chicken breast (shredded).
Step 7: Season
Add chicken bouillon and bay leaves until the whole dish boils. In this way, the chicken will get a deeper flavor of the sauce.
Step 8: Serve and Enjoy
