Ingredients: ( for Chicken Vegetable Rice meal )
1/2 tbsp - rice
2 tbsp - red lentil ( masoor daal )
oil - 1/2 tsp
1/4 tsp - ginger ( finely chopped)
1 tbsp - Onion ( finely chopped)
1/2 cup - boneless chicken breast (finely chopped)
Spice Powders - ( turmeric powder - 1/4 tsp, coriander powder - 1/2 tsp, pepper powder - 1/4 tsp )
2 pinches - salt
1 cup Vegetable shreds ( I used carrot, cauliflower & potato)
1 tsp - chopped coriander leaves ( or parsley)
1 Cup - water
Step 1: Rinse Rice & Lentil
Step 1: Take 2 tbsp of lentil and 1/2 tbsp of rice into a bowl. Rinse couple of times and keep aside
Step 2: Heat Pan & Pour Oil
Step 2 : Heat a sauce pan and pour 1/2 tsp of oil..
Step 3: Add Ginger
Step 3 : Add ginger and saute for 20 seconds..
Step 4: Add Onion
Step 4: Add the Onion and saute for a minute..
Step 5: Add Chicken, Spice Powders and Salt
Step 5: Add the chopped chicken, spice powders, salt and cook for 2 minutes on medium-high heat..
Step 6: Add Vegetables & Coriander Leaves
Step 6: Add the shredded vegetables, coriander leaves and cook for 1 minute..
Step 7: Add Rice, Red Lentil and Water
Step 7 : Add the rice, red lentil, 1 cup water and mix..
Step 8: Let It Boil
Step 8: Put the heat and bring it to a boil
Step 9: Cook 20 Minutes on Low
Step 9: When it boils, reduce the heat to low and cook for 20 minutes..
Step 10: Serve
To Serve your toddler:
Take 1 Cup of cooked meal in a bowl, shred the chicken into tiny pieces and serve when warm :)..
