Introduction: Chicken in Walnut Sauce

This is a traditional meal in Republic of Georgia, called Satsivi. We usually have it with some bread but I serve it with rice as rice is popular in Britain.

What you need:

200gm of Walnut

2 garlic cloves

1 chili

Spices: ground coriander, dry dill, saffron, salt.

1 big onion

500 or 600gm of diced chicken

1 egg

1 tea spoon of vinegar

Step 1: Walnut Mixture

Grind (using meat grinder or in any grinder) walnuts together with chili and garlic, mix salt and all the spices in it (I use Georgian spice mix (Khmeli Suneli) which contains all the herbs mentioned before and even more)

and mix it all by hand. Round the mixture up into small balls and put aside.

Step 2: Preparing the Chicken

Finely chop the onion and fry it gently for 5 minutes. Add chicken and fry it for another 5 minutes. After frying the chicken and onions for 5 minutes add some hot water in the saucepan (just enough water to cover the chicken) and simmer it for about 45 minutes to one hour.

Step 3: Last Step

After simmering the chicken for about an hour start adding the walnut ball mixture into it (one by one). Stir all the walnut in till it completely dissolves. keep simmering it for 10 - 15 minutes till the mixture thickens up.

In the end, mix up the egg with some vinegar and add it to the chicken and stir it for a minute. Switch off the cooker and it's done.

Step 4: Serving

Serve it with rice and any vegetables you like or just have it with some bread.
