Hey everyone, here is my latest recipe video for Chocolate Banana Cake With a Cream Cheese Frosting. I love making great desserts from scratch and I'm always jotting down the recipes as I go, perfecting them over time. This one is a big hit on most of the boats I've been on and I hope it becomes a hit with your family and friends as well. Step 1: Ingredients

For The Cake

  • 3 cups of flour
  • 1 cup of butter, softened
  • 1 cup sugar
  • 3 eggs
  • 1 tsp vanilla
  • 1/4 cup cocoa powder
  • 1 tbsp baking powder
  • 1 tsp baking soda
  • 1 1/2 cups buttermilk
  • 1/2 tsp salt
  • 4 large ripe bananas

For The Frosting

  • 1 pack of cream cheese 8 oz
  • 1/2 cup butter
  • 1/4 cup maple syrup
  • 3 tbsp of honey or 1/4 cup icing sugar
  • 1 tsp vanilla

Step 2: Whisk the Dry Ingredients

Heat a oven to 350 degrees. Then in a medium mixing bowl whisk together the flour, baking soda, baking powder, Cocoa and salt. Set that aside.

Step 3: Prepare Cake Pans

Grease and flour two 9 inch cake pans and set those aside.

Step 4: The Batter Begins

In another mixing bowl with a hand mixer cream the butter and sugar together. Add the eggs one at a time mixing in between until eggs are absorbed. Mash the bananas add that to the mixture. Then add the vanilla and mix some more.

Step 5: Alternate Flour Mixture and Buttermilk

Alternate the between the flour mixture and butter milk adding it to the egg mixture. Mixing in between, I do this in thirds so add the flour mixture then mix, add the milk then mix and keep going back and fourth until it's all incorporated.

Step 6: Pour the Cake Batter Into the Pans

Now divide the cake batter between the two pans that were greased and floured previously. Give them a gentle tap on the counter to release the air bubbles and bake them in the oven at 350 degrees for about 25-30 minutes or until a toothpick comes out clean when inserted.

Step 7: Now the Frosting

1. In a small mixing bowl with a hand mixer cream the cheese well.

2. Add the butter and cream some more until well mixed.

3. Mix in the maple syrup, honey and vanilla. The icing should be spreadable.

Step 8: Spread the Frosting

Make sure the cake is fully cooled, you don't want to melt the frosting. Spread the frosting all over the first layer of the cake until it's covered to your liking then add the top layer of cake and finish spreading, jazz it up however you like.
