Introduction: Chocolate Caramel Heaven Pie

This pie is the perfect pie for chocolate and caramel lovers, or even just pie lovers in general. This recipe comes from a roommate of my Moms when she was in college. She makes it on occasions like birthdays and such. It is very simple to make and is very delicious, so here we go!

Step 1: Ingredients and Items

Here's what you'll need for the Pie.

The crust is:
-1/2 Cup Flour
-1/4 Cup Butter
-1/4 Cup Nuts (Pecans)
-1/8 Cup Powdered Sugar

Cream Cheese Layer:
1/2 Cup Powdered Sugar
4.5 Oz. Cool Whip (or other Whipping Cream)
4 Oz. Cream Cheese

Chocolate Layer:
1 small package of INSTANT Chocolate Pudding
1 small package of INSTANT Vanilla Pudding
2 cups milk

Extras-

Carmel:
1 1/2 cups sugar
1/3 cup water
1 1/4 to 1 1/2 cups heavy cream
1/2 vanilla bean or 1/2 teaspoon pure vanilla extract

Roasted Pecans

Chocolate Bar for Chocolate curls

Items:
Pie Tin
Mixing Bowls
Various Measuring tools 
A wooden Spoon
Large Sauce pan
Vegetable Peeler 

Step 2: The Crust

First Chop the nuts up until little chunky, then add the flour, butter, nuts and powderd sugar together in a mixing bowl and mix. Once this is done press into a pie tin. Bake at 350 degrees for about 15 minutes or until the crust starts to turn golden brown. Then let it cool before adding the next layer, it'll melt and not look or probably taste as good.

Step 3: The Cream Cheese

Mix the powdered sugar, Cool Whip and cream cheese in a mixing bowl until smooth. Spread  a layer on the bottom of the pie crust. Do not fill completely and do not go up the edges. This is just suppose to be a small layer on the bottom. You do not have to use all of it, in fact you probably wont. I usually eat what I don't use, It's so good. 

Step 4: The Chocolate

Mix the chocolate and vanilla pudding mixes with the milk and stir until smooth. Pour on top of the cream cheese layer, place in fridge and cool until set. Don't wait and leave it in the bowl for too long because it'll thicken up and it'll just be more difficult to make a nice smooth layer. 

Once the Chocolate layer is chilled cover it with Cool Whip and you're done. Now for the things that make it look as good as it tastes.

Step 5: The Caramel, Roasted Pecans and Chocolate Curls

For the extras you can put some caramel sauce on top as well as some roasted pecans. 

For the caramel, mix the water and sugar together and on low heat let the sugar dissolve. Then let it sit at a simmer until it turns medium brown. You do not need to stir the sugar at all, agitating the sugar will cause it to crystallize easier and cause it to just end up like a big block of sugar.. You really need to watch carefully because it'll go from clear to burnt in less then a minute and it will even darken a little more after taken off the burner. Then, microwave the cream until its lukewarm then slowly add to the now browned sugar and stir with the wooden spoon, it will splatter so watch out. Once that's added, put in the vanilla and return to the burner and simmer while stirring for about 2 minutes until it because a little thicker. Remove form stove and let it cool. This can take up to 4 hours. Then you're ready to drizzle over the Cool Whip layer, you can make designs or whatever you want to do. 

To roast the pecans its pretty simple. Set the oven to 350 degrees and put the nuts on a small cookie sheet and let them roast for about 5-7 minutes until you are satisfied with how they look and smell. 

I Also add some shaved chocolate on the top to add some more flavor and appeal. Use the Vegetable Peeler on your favorite chocolate bar and make little curls.

Once your done with the extras, put the whole thing back in the fridge and let it chill and serve cold. Now you have one of the most delicious desserts in the world to serve friends and family! ENJOY!
