Chocolate Chip Banana Bread Muffins




This is a wonderful snack to have any time of the Day! These muffins are sure to be a big delight for your family and friends to enjoy.

They are are an Easy snack to prepare in the kitchen and a great way to make use of your ripe bananas.

And who doesn't enjoy the taste of warm chocolatey banana bread muffins.. it's definitely a comfort food!! So when you are feeling in the mood to whip up a delicious snack, think of these Banana Bread Chocolate Chip Muffins !!

Step 1: Banana Bread Chocolate Chip Muffins - Stir the Ingredients


3/4 Cup Sugar

1/2 Cup Vegetable Oil

1 tsp. Vanilla

1 2/3 Cups all purpose flour

2 eggs

1 tsp. baking soda

1/2 teaspoon salt

1/2 tsp. ground cinnamon

3 very ripe bananas

1 or 2 Cups of Chocolate Chips (your preference)


Heat the oven to 365 degrees F

Line muffin tin cups with paper muffin cup liners or spray with non cook spray

In a mixing bowl beat the sugar, oil, vanilla and eggs with a whisk

In a separate mixing bowl mash the bananas

Then add the mashed bananas to the mixing bowl with the sugar, oil and eggs and vanilla

Stir in the the cinnamon, salt, baking soda and flour to the mixture

Finally Stir in the chocolate chips

Bake for 10-12 min (use a toothpick to make sure the centers of the muffins are cooked through)

Step 2: Add the Remainder of the Ingredients, Mashed Bananas, and Chocolate Chips

Step 3: Pour the Batter in Baking Tins, Put Muffins in Oven and Enjoy !

    We had local eggs from a friend so even though I don't usually cook with eggs (I'm vegan) I decided to try these. They look so delicious and the combination of banana and chocolate sounds really yummy. I made these this morning for my boyfriend who is swamped in taxes and they went over great! I like how succinct the instructions were. I think you accidentally left out the part that explains adding the flour and vanilla in the final version you posted here, so (no biggie) I sifted the flour with the baking soda and I beat the vanilla in with the wet ingredients first.

    Instead of chocolate chips alone, I also used a leftover chocolate chip and graham cracker mix that never got into another recipe. Still worked. I also sprinkled a little desiccated coconut and pecans on top (just cause I had that left over from something too).

    Also, I used part sprouted spelt for the flour to ramp up the nutritional value and this worked fine. I made regular sized muffins, so I cooked them more like 18 to 20 minutes. Although I didn't time it exactly, the muffins bounced back on top when I pressed them (didn't have a toothpick). I used an ice cream scoop and that measured the muffin size in the paper cups perfectly.

    Yummy! I bet if you made these in a mini muffin pan they would look just like those adorable mini-muffins they sell in pouches! I might have to niece was just talking about wanting to make banana bread :)
