Introduction: Chocolate Covered Peanut Butter Eggs

A simple recipe and a fun activity makes these Easter treats a must have addition to your family's Easter traditions. Our children helped decorate these eggs. You can also use this recipe to make delicious, shaped treats for many other occasions.

Prep Time: 15-20 minutes

Servings: up to 16.

INGREDIENTS:

3 3/4 cups of powdered sugar (confectioners sugar)

1 cup Creamy Peanut Butter

1/4 cup butter or margarine

1 Tablespoon milk

8 ounces of semi-sweet chocolate (8-1 ounce squares)

1 Tablespoon shortening

DIRECTIONS:

1. In a large bowl, mix together powdered sugar, peanut butter, butter and milk until blended. Mixture will not be smooth. Shape the mixture using a spoon for a guide into the desired egg shape. This recipe will make anywhere from 2 to 16 eggs. Place eggs in freezer for at least an hour.

2. While the eggs are in the freezer, break the chocolate squares into smaller pieces and place in the top of a double boiler with the shortening. Melt over medium heat, stirring frequently until smooth. Using a fork or your fingers, dip the peanut butter eggs in the chocolate until covered. Place covered eggs on a drying rack or waxed paper until cool. Once cooled, decorate the eggs as you please.
