Introduction: Chocolate Covered Strawberry Cupcakes
Who doesn't like chocolate covered strawberries??? They are so romantic! This recipe is decadent! They are also filled with strawberries.
For these cupcakes, use your own favorite chocolate cake recipe. I used a triple chocolate cake recipe. I wanted them to be very very chocolaty!!
Make the cupcakes and let them cool.
For the strawberry filling you will need:
- 16 oz bag Sweetened frozen strawberries, thawed, pureed. (If you cannot find the sweetened strawberries, use the unsweetened strawberries and sprinkle with 1/4 cup of sugar and thaw, puree)
-1/3 cup sugar
-1 teaspoon lemon juice
-3 tablespoons cornstarch
In a sauce pan, put all the ingredients and bring to a boil until the mixture thickens. Remove from heat and cool.
To make the Nutella Frosting, you will need:
-3/4 cup unsalted butter
-3 cups powdered sugar
-1/3 cup milk
-1 teaspoon vanilla extract
-1/2 cup nutella
Beat all the ingredients together. Set aside till ready to use.
With a sharp knife, cut out the center of the cupcake in a cone shape. Be careful not to cut too deep, only to the center of the cupcake. Reserve the piece to put back on the cupcake.
In the hole you created, put a small spoonful of strawberry filling. Top with the piece you cut out. Put the icing on in anyway you like. Decorate with a fresh strawberry.
Melt 1/2 cup of white chocolate
Melt 1/2 cup of semi sweet chocolate
Drizzle the chocolate over strawberries
I put the melted chocolate into a snack size ziplock bags and cut the corner off and squeezed the chocolate over the berries.
