Chocolate Cupcakes With Cream Cheese Filling




If you love chocolate and cream cheese, here is the PERFECT combination. It's a little time intensive, but completely worth it.

8 oz. cream cheese, softened
1/2 cup white sugar
1 egg
1 cup semisweet chocolate chips (minis work really well)
1 chocolate cake mix

Step 1: Preheat & Line

Preheat the oven to 350 and optional: line cupcake tins with cupcake papers.

Step 2: Make the Cake, But Don't Bake

Prepare chocolate cake mix according to package directions, but do not bake.

Step 3: Mix Cream Cheese & Sugar

In separate bowl cream together cream cheese and sugar until smooth.

Step 4: Egg and Chocolate

Beat in the egg until well blended, and then stir in chocolate chips. 

Step 5: Fill It Up

Fill 1/3 full with chocolate cake batter. Add 1 tsp. cream cheese mixture to the center, and top with more cake batter. 

Step 6: Bake

Bake according to package directions for cupcakes. 

Step 7: Cool Down & Enjoy

Cool cupcakes and optional: frost with chocolate or cream cheese frosting.

    Do you have a picture of how the cupcake would look like on the inside, once it's baked? Thanks.

    You gave me an excuse to make them again as I didn't have a picture. :) Ideally, you'd hope the cream cheese was more in the middle, but here you go! Also, there's a difference in looks when it's fresh out of the oven like this one and when its been in the fridge.

    Thanks so much, Sarajo. Pictures does help. It looks like a crackly cookie, but in cupcake form. It does look delish!! I suppose the cream cheese makes the cookie more creamy? I will try to make this tomorrow. Thanks so much for your reply.

    Honestly, this second go round didn't go as well. First time around, I used a milk chocolate cake mix and the consistency was perfect. When the cupcakes were finished, the cream cheese filling was a perfect pocket in the middle. This second time around, all I had was a devils food cake mix. The consistency was not the same. It was much thicker and I even thinned it a bit.
