Lovely Chocolate shortbread sandwiches (i just realise it looks like tim tams)

Recipe makes 16 sandwiches
Ingredients:

Shortbread Cookies

  • 1/2 cup butter
  • 1/4 cup caster sugar
  • 1 ½ cup general purpose flour
  • 2 tablespoon unsweetened cocoa powder

Filling

  • 80g white chocolate
  • 1tbsp butter

Topping

1) Milk chocolate topping

  • 120g milk chocolate
  • 1 tbsp. butter
  • 1 teaspoon vegetable oil

2) White chocolate topping

  • 120g white chocolate
  • 1 tbsp. butter
  • 1 teaspoon vegetable oil

Cooking/baking equipments required

  • Saucepan
  • Mixing bowl
  • Baking tray
  • Rolling pin (optional)
  • Measuring cups/spoons
  • Weighing scale

Step 1: The Shortbread

Get your shortbread material together, let the baking begin!

  1. Rub butter in flour and cocoa until mixture r looks like breadcrumbs.
  2. Add in sugar to mixture to knead into a dough. Cover and chill for about 30 minutes.
  3. Pre-heat oven to 180C. Grease a baking tray 13”x6”.
  4. Roll out dough and fit into tray. Cut into 32 bars.
  5. Bake for about 15 minutes or just set. Do not over bake, it chars easily.
  6. Cut between bars again while warm. Transfer to wire tray to cool completely.

Step 2: The Filling

Now we make the filling, the ham of the sandwich, the patty of the burger

  1. Place white chocolate and butter in a bowl and melt over a pan of simmering water.
  2. Spread the chocolate on a bar and lightly press another bar over it to form a sandwich.
  3. Repeat for the next 15 sandwiches.

Step 3: The Coating

To make the coating and toppings, the steps are essentially the same

(A) Milk Chocolate Coating

  1. Melt milk chocolate and butter (same as in previous step).
  2. Coat the cookies (If its not a gift, feel free to lick your fingers).
  3. Leave to set.

(B) Milk Chocolate Drizzle.

  1. Use the remaining milk chocolate above to drizzle over the cookies
  2. leave to set.

(C) White Chocolate coating

  1. Melt white chocolate and butter as above
  2. Coat as many cookies with the chocolate available.
  3. Leave to set.

If you run out of chocolate, the cookies are lovely without any topping as well.

Step 4: Serve and Enjoy! or Pack and Share the Love

You can wrap it up for an excellent holiday gift (or any gift).

And/or enjoy it as dessert or with tea/cofee.
