Introduction: Cinnamon Bread With Dried Cranberries (zucchini Pie)

If you really like trying new tastes, then you should make this sweet cinnamon zucchini bread. It's easy to make and is worth spending some time. What could be better than a big cup of hot tea and cinnamon-scented bread in late autumn evenings?

Step 1: Ingredients

Ingredients for basis:
  • 3 eggs
  • 1 glass of sugar
  • 1/2 glass sunflower (or olive) oil
  • 2 glass of flour
  • 2 galsses of grated zucchini (about 1/2 kilo)
  • 2-4 teaspoons cinnamon
  • 1 teaspoon soda
  • 1/2 teaspoon baking powder
  • 1 teaspoon salt
  • 1 teaspoon vanilla sugar
  • 100g dried cranberries
You can make sugar powder and lemon juice glaze or just use sugar powder for topping. Both of them tastes really good!

Ingredients for glaze:
  • 1/2 cup sugar powder
  • 1 tablespoon fresh lemon juice
Other supplies:
  • bread baking form
  • electric whisk or mixer
  • peeler and knife
  • bread knife

Step 2: Grate Zucchini

Take your zucchini and wash it under running water. Cut off ends from both sides and peel it of. Slice zucchini in several pieces. It will be easier to hold zucchini while you grate it.

Crack three eggs into the bowl and pour in sugar. Whisk this until sugar is well combined. Then pour in sunflower oil and whisk it again.

Now add grated zucchini and stir again everything well.

Step 3: Making the Batter

In the other bowl put flour, cinnamon, soda, baking powder, salt and vanilla sugar. Mix it well and slowly with tablespoon.

Little by little pour dry ingredients mixture into bowl with eggs, sugar, sunflower oil and zucchini. Mix it with electric whisker until it's well combined and you don't have any dry spots.

After this, put dried cranberries ant mix batter again.

Step 4: Baking

Take bread baking form and grease all inside with oil. It's necessary if you don't want to burn the bread. Then pour the batter gently into the baking form.

Bake the bread in the oven at 200 C for about 50-60 minutes. Insert toothpick into the middle. It should come out clean when it's done. If it's still "wet", reduce tmperature to 100 C and bake more for about 10-15 minutes.

Let it cool on a rack for 5-10 minutes once it's out of the oven. Then pour some sugar powder or lemon juice glaze.
