Introduction: Cocoa and Tea Biscuits No Bake Cake

No Oven needed !!!!

I have been eating this dessert for as long as I remember.

My grandmother used to make it, then my mom and now I do it for my kids and I would like to share it with you all. It takes less than 15 minutes to assemble but you have to wait for it to set in the freezer for 4 hours and best of all no baking required. Trust me it is worth the wait.......

Step 1: Ingredients

  1. 1 cup of cocoa powder
  2. 1 cup of powdered sugar
  3. 1/2 cup of soft unsalted butter (10 seconds in the microwave)
  4. 30 tea biscuits
  5. 3 eggs
  6. 1 tsp vanilla extract
  7. 1 tsp lemon zest

I used 2 packs of the ghandour 555 biscuits they are very crunchy and not buttery. 2 packs are equivalent to about 160 grams. But you can use any biscuits you prefer.

Step 2: Directions

Break the biscuits in 4 and put then aside

Break the eggs in a bowl and mix them

Add the cocoa, sugar, eggs, vanilla, lemon zest and butter and fold them very well until the mixture turns one color.

The mixture will not be liquid, it should have the consistency of dough.

Then add the biscuits and fold again until all the biscuits are covered with chocolate.

Line a cake pan with plastic wrap and pour all the mixture, press on the mix to take the shape of the pan. Cover and place in the freezer for 4 hours.

The best part:

Before you clean the bowl and the spoon, make sure to lick them clean......

Step 3: Enjoy the Dessert

Remove from the freezer, unwrap, slice and eat.

Great with coffee or tea.

Extra tips:

To make it sweeter, substitute 1/4 cup of cocoa with powdered sugar

You can add any kind of nuts in the mix

You can line the bottom of the pan with colorful cake sprinkles

The leftovers, if any, should go back to the freezer.
