To start with, note that the word "easy" is not in the title of this instructable!!! While the result was a tasty fritter (otherwise why would I post it), the batter was hard to work with and I was only able to get consistent results with a bit of practice (my kids ate a lot of fritter pieces to begin with).
That said, the end result is a tasty and light fritter that hits the spot! Add some bacon and a bit of chilli and you have a delicious filling snack!
Step 1: Ingredients
- 1/2 cup coconut flour
- 1 tsp baking powder
- 1/4 tsp salt
- 1/2 tsp pepper
- 3 eggs
- 1/4 cup sugar
- 2 cups milk, approximately
- 400gm cream corn
Step 2: Mix
Beat the egg and sugar until thick.
Sift the flour, salt and baking powder.
Combine with the milk and egg mix to make a thick batter.
Stir in the cream corn. Add more milk if it is too thick.
Step 3: Cook
Cook spoonfulls of the batter in lightly greased frying pan. I tried cooking them in coconut oil but found that the fritters spread out too far and were even less likely to stay together. A little bit of butter gave the best results.
The coconut flour doesn't really lend itself to sticking together. After a bit of practice I was getting the fritters to stay together but in all honestly it was pretty frustrating to start with! The key is to cook the first side well(not burn!) over a medium heat before trying to flip them. This is not a fast process so be patient.
Step 4: Serve
I found that serving these with bacon gave a good, salty, contrast to the sweetness of the fritter (but what doesn't bacon improve!).
This was my first attempt at using coconut flour and I learnt a lot. The first thing was that it is good to use Google before simply replacing the flour in a normal receipe with coconut flour! Some things that I learnt:
- Coconut flour doesn't bind well. More eggs are required to hold the batter together.
- Coconut flour absorbs a lot of liquid. The qty of milk that I used (and listed in the ingredients) is twice what I was expecting.
- Coconut flour has a lot of flavour. You can really taste the coconut which I like! Be warned if coconut isn't one of your favourites...
