If it's served for lil ones, use decaf coffee instead!

Step 1: Ingredients and Method

1 tbsp instant coffee granules dissolved in 200 ml hot water

200 ml cooking oil

2 eggs

200 g sugar

200 g flour

40 g cocoa powder

2 tbsp hot chocolate powder such as from Tim Horton's or chocolate malt drink such as Milo

a pinch of salt

1 tsp baking soda

enough chopped walnut/pecan/peanuts/sesame seeds whichever

Prepare steamer pot, bring water to boil on high heat, then lower the heat to medium while preparing batter

Mix coffee with cooking oil, set aside

Mix eggs and sugar using wire whisk, set aside

Combine dry powder well

Into eggs mixture, stir in dry mixture and coffee mixture alternating each other. Start with adding dry then wet then dry

Pour batter into mold, sprinkle with chopped walnuts and steam for 30 minutes

Cool on rack
