Collard Green Potato Patties

These healthy patties are made of collards and potato. Collard greens are excellent sources of vitamin A, vitamin C, vitamin K, calcium and manganese, and moderate sources of riboflavin and folate. This is the first time we tried collards (we have no idea how it 'll taste). It was good. We all liked the patties. This recipe is easy to make and great way to include collard greens in your diet. These patties can be serve as appetizer or evening teatime snack. Please try it out and let me know how it turns out.

Ingredients:

1 bunch of collards, stems removed and chopped into small pieces
3 to 4 medium size potato, peeled, boiled and cut into quater

1/2 tsp Italian seasoning

1 tsp chilli flaked

2 tbsp of Parmesan cheese (optional)

1/2 cup Bread crumbs, divided

1 onion, chopped finely

4 garlic clove, finely chopped

Salt to taste 1 tbsp of oil + some more for shallow frying

Step 1: Make Patties

Heat a tbsp of oil in pan over medium flame. Add garlic and saute for a minute.

Add onion and saute until it turn to transparent.

Add in seasoning, flakes & salt and mix all well

Add green collards and stir occasionally until it cooked well. Once it cooked add parmesan cheese now.

Remove it from flame and let it cool for sometime.

Take potato in medium mixing bowl, mash it well.

Add in the green mixture and combine all together. Check for salt taste, add if needed.

Add 1/4 cup of bread crumbs into it and mix well.

Step 2: Shallow Fry the Patties

Take a small portion from the mixture and shape it into pattie. Then roll it in extra bread crumbs.

Heat oil in pan for shallow frying on medium heat. Shallow fry the patties on both sides until it turn to golden brown color. It will take about 3 to 4 minutes.

Drain excess oil using paper towel lined plate.

Serve hot with your choice of dip.
