Introduction: Congee - Filipino Style

Congee is the ultimate Asian sick food, great food when you're feeling bluesy. This is my interpretation of delicious Filipino congee - arroz caldo.

Step 1: Ingredients

Ingredients
  • Chicken Breast
  • Green Onion
  • Egg
  • Salt and Pepper

Kitchen Tools

  • Rice cooker
  • Pot
  • Cutting board and knife

Step 2: Mise En Place

To prep your ingredients, first make sure to:
  • Defrost the chicken
  • Chop the green onions into small ~1cm long pieces

Step 3: Poach Chicken

Poach the defrosted chicken by putting it in boiling water. The amount of time you should poach the chicken for depends on the size of the chicken, so make sure that the chicken has cooked by cutting it open after you take it out of the water. You don't want to eat raw chicken!

Step 4: Slice Chicken

When the chicken has been cooked, take it out of the water and slice it up into small shreds.

Step 5: Making the Rice Porridge

It's possible to make the porridge with a pot and stove - but using a rice cooker is so easy and completely worry-free! Use a rice cooker as usual (remember to wash the rice beforehand), but in order to get the congee-like consistency, add in 1.5 times the amount of water than the normal 1-to-1 ratio into the rice cooker.

Step 6: Boil and Slice Egg

Hard boil the egg (for the people like me who have only recently begun cooking, an egg is usually fully boiled at around 7 minutes) and slice it in half to add to the congee later.

Step 7: Mix It All In

When the rice is almost cooked, add in the chicken strips and green onions and mix well.

Step 8: Season

    When your congee is finally done cooking, season it yo your liking using salt, pepper and other condiments (traditionally, I put some soy sauce in as well).
