Cool Summer Vegetable Ribbon Pasta Salad



About: I love to craft with items I can find around the house. It's fun to repurpose/ reuse stuff for crafting.

A salad that is a hearty meal!
Minimal cooking so you don't have to heat up the kitchen on a hot summer day.
Also a great way to use summer vegetables.

Step 1: Ingredients

Check the pantry and the fridge for what you have on hand.

This makes a huge salad.

I used:

2 zucchini
2 cucumbers
1 small bag sliced carrots
black and green olives, sliced
1 can chickpeas, drained
1 can of chicken, drained
bottled balsamic vinaigrette dressing
1-2 bags of any shredded cheese that you like

You will need a vegetable peeler and bowl

Step 2: Slice, Dice, and Mix It Up

Cook pasta, drain, and cool. Slice vegetables with peeler to make thin zucchini and cucumber ribbons.
Put all ingredients in the bowl and mix it up.

Step 3: Make It Your Own!

This cool salad is filling and keeps well.
It's great for dinner or pack it for a cool lunch on the go. It's a tasty way to get more vegetables in your diet.
