Omurice is a Japanese omelet dish with fried rice as filling. The rice usually have chicken for meat and a tomato flavor. I added in some curry which compliments quite well with this dish.
This recipe is great for leftover rice and you can pretty much use any kind of meat or vegetables you have at home.

Step 1: Ingredients
- 2 cups cooked rice
- 4 eggs
- 100 grams turkey mince
- 1 hotdog
- 3 pieces cup mushrooms, sliced
- 2 cloves garlic, minced
- 1 teaspoon minced ginger
- Half an onion, chopped
- Half a red capsicum, chopped
- 2 tomatoes, one chopped, the other sliced thinely for garnish
- 1 tablespoon parsley, minced plus extra for garnish
- 2 teaspoons tomato paste
- 3 teaspoons curry powder
- 1 teaspoon orange marmalade
- Canola oil
- Tomato Ketchup
Step 2: Cooking the Fried Rice
Prepare the ingredients by mincing the garlic and parsley, chopping the onion, capsicum and one tomato. Slice the mushrooms and the other tomato, the latter will be used for garnish. Slice the hotdog in thirds. Take both ends and make 4 cuts on the cut end portion to make the octopus. Slice the middle portion of the hotdog lengthwise and make 4 cuts on both ends to make the crab. On moderate heat, put a teaspoon of canola oil and pan fry the hotdog pieces. Once browned and the cut ends flare, remove from the pan and set aside.
Using the same pan, add a tablespoon of oil and saute the garlic and onions for 2 minutes, Then put the minced pork and let this brown. Add the tomato paste and saute for 2 minutes. Then add in the chopped capsicum, tomato and sliced mushrooms and saute for 5 minutes. Put the curry powder, marmalade and salt and let it cook for 2 minutes. Add the rice and thoroughly mix the ingredients and stir fry until the rice is a uniform yellow color. You can add more salt if needed at this point. Then portion the rice in two dishes and set aside.
Step 3: Making the Omelette
To make one omelette, whisk 2 eggs in a bowl and put a pinch of salt and pepper. On moderate heat, pour 2 teaspoons of oil and spread on the surface of the pan. Pour the eggs and spread evenly by tilting the pan. When the egg is cooked, turn off the heat and put one portion of the fried rice on the middle of the egg. Lift both ends of the egg omelette towards the rice and move the whole omelette on one end of the pan. Have a plate on that side and tilt the pan on top of the plate. (3rd photo)
Reshape the omelette to an oval shape with your spatula.
Add 2 thin slices of tomato, some parsley and one octopus and crab hotdog pieces. Drizzle ketchup on top of the omelette and serve.
