Introduction: Delicious Lemon Mug Sponge Cake

Ever feel like you wanted cake, but didn't have enough ingredients? Feeling too tired? Don't even know how to bake? Then this is the cake for you! With a nice, soft hint of lemon and a bouncy texture, this mug cake also takes only takes six minutes to make! Simply mix the ingredients and stick it in the microwave. Read on to learn how to make the easiest cake in the world!

Supplies

  • Medium-large sized microwavable mug, as shown in title image
  • Something to mix ingredients with (E.g. Fork, spoon.)
  • Microwave Oven
  • Your mouth, to enjoy your creation!!!

Ingredients:

  • 2 Tablespoons of Butter (30g)
  • 1 large Egg
  • 1 Teaspoon of Vanilla Extract
  • 1 1/2 teaspoons of Lemon Extract
  • 1/4 Cup of granulated sugar
  • 6 tablespoons of flour (3/8 cups)
  • 1/4 Teaspoon of baking powder
  • A small pinch of salt
  • The smallest bit of powdered sugar, to dust. (Optional)
  • Berries, to top, (Optional)
  • Whipped cream, to top. (Optional.)

Step 1: Now... the Steps!

1. Put the butter into the large mug and microwave until melted. (20-30 seconds)

2. Add in the egg and mix it in with your stirring utensil.

3. Now, you can mix in the milk, vanilla and lemon extracts, and the granulated sugar.

4. Then, add in the flour, baking powder, and the small pinch of salt

(If you are wanting to save this cake for later, cover and put the mug into the fridge until ready to use. Ignore these next steps until needed.)

5. Set microwave for 1 minute and 20 seconds. Be sure to test with a toothpick that the cake is done. (Toothpick must come out with no batter on it!)

6. (Optional) Cover with whipped cream and/or berries. I've tried strawberries, and they go really well!

7. (Optional) Sprinkle powdered sugar over cake.

8. Enjoy!


Step 2: Notes

How to store: If you had enough control to not eat the whole cake in one bite, wrap plastic wrap over mug and leave on your kitchen counter. (Can store for 4-ish days)

When you take cake out of microwave, make sure to check if there is any batter on the sides of the mug. If so, put it in the microwave for 30 more seconds.
