Introduction: Delicious Protein Packed Zucchini Bread

It is summer time and the zucchinis are going crazy! This recipe uses up a lot of that zucchini while making the treat just as tasty as it would have been without it. It also cuts back on sugar and has added protein powder to give it a kick. Nobody can taste the difference, but their bodies will thank you for it.

Last year my dad planted zucchini in his garden and he had me come up with a use. After some research I stumbled upon a recipe. However, it had too much sugar and not enough zucchini for his preferences. With some trial and error we finally made the perfect ratio of healthy to tasty, although you can always add some more zucchini!

Step 1: Ingredients and Supplies

Ingredients:

  • 2 1/2 cups of flour
  • 1/2 cup of protein powder
  • 1 tablespoon of ground cinnamon
  • 1 teaspoon of baking powder
  • 1 teaspoon of baking soda
  • 1 teaspoon of salt
  • 3 eggs
  • Zucchini (3 cups when grated)
  • 1 cup of walnuts
  • 1 1/2 cups of chocolate chips
  • 1 cup canola or vegetable oil
  • 1 1/4 cups of white sugar
  • 3 teaspoons of vanilla extract

Supplies:

  • Cheese Grater
  • Bread Pan
  • Medium Bowl
  • Knife
  • Large Bowl
  • 1 cup
  • 1/2 cup
  • 1/4 cup
  • 1 tablespoon
  • 1 teaspoon
  • Whisk or fork
  • Oven

Step 2: Add the Dry Ingredients

If wanted, preheat the oven to 325 degrees F. now. Otherwise you can do it at a later time.

In the medium sized bowl combine the flour, protein power, baking soda, baking powder, cinnamon, and salt.

  • 2 1/2 cups flour
  • 1 tablespoon cinnamon
  • 1 teaspoon salt
  • 1/2 cup protein powder
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder

Step 3: Combine

Mix the dry ingredients added in the last step until they are completely combined.

Step 4: Add the "Wet" Ingredients

In the large bowl add the sugar, oil, vanilla extract, and eggs.

  • 1 1/4 white sugar
  • 1 cup vegetable/canola oil
  • 1 teaspoon vanilla extract
  • 3 eggs

Step 5: Combine

Combine the ingredients added in the last step until they are fully mixed.

Step 6: Combine the Dry and Wet Mixtures

Pour the dry mixture made in the first step into the wet one made in the previous one. Then, with a whisk or fork, combine them until they form a dough-like substance. Set this aside while you prepare the rest of the ingredients.

Step 7: Zucchini!

Cut the zucchini in any way you want to make it easier to handle. Then check the insides. If the center is too "mushy" or grainy, scoop it out. If it is not, continue on to grating the plant with the cheese grater. Then add it to the dough. If you want you can mix it in now, but it is not necessary.

Step 8: Walnuts!

Cut the walnuts into fine pieces. Measure them out to 1 cup before dumping them in with the zucchini.

Step 9: Chocolate!

Measure out 1 1/2 cups of chocolate chips and pour them into the rest of the mixture. Then mix everything in the large bowl together until you have a uniform looking batter.

Step 10: Bake

If the oven is not already preheated, preheat it to 325 degrees F. Then grease and flour the bread pan. To flour a pan put a small amount of flour in it and spread it around. This just helps the grease/butter do its job.

Fill the pan with the batter and put in the oven. Let it cook for 40 min to 80 min.(1 hour and 20 min. The cooking time depends on your pan and your oven, but you will know when it's done when a knife can be inserted into the bread and removed clean (excluding melted chocolate.)

Once the bread it done, take it out of the pan and let it cool.

Now you can enjoy your delicious and healthy zucchini bread!
