Introduction: Double Crust Apple Pie With Bacon
6 Tbsp. unsalted butter
2 1/2 Lbs. firm tart apples peeled. cored and sliced 1/4-in thick( Granny Smith, Northern Spy)
1/2 c sugar
1/2 tsp. ground cinnamon
2 tbsp. freshly squeezed lemon juice
2 tbsp. cornstarch
Basic Pie Dough(2)
1 egg beaten with 2 tbsp. water to make egg wash

Step 1: Double Crust Apple Pie With Bacon
Melt 3 tbsp. of the butter in large, heavy-bottomed sauté pan over medium heat.
Add the apple wedges and sauté until slightly softened but holding their shape, 3-4 min.
Add the 1/2 c of sugar and stir to combine.
Add the cinnamon and stir.
Step 2: Double Crust Apple Pie With Bacon
In a bowl, combine the lemon juice and cornstarch.
Stir the mixture into the apple mixture and remove the pan from the heat.
Let cool completely.
Preheat oven to 375 degrees F
Step 3: Double Crust Apple Pie With Bacon
Fill an unbaked bottom pie crust with apple filling and dot with remaining 3tbsp. butter.
Top with a rolled-out top pie crust.
Cut 1/2-in slits in a round-the-clock pattern into the top crust to allow steam to escape.
Brush the top lightly with egg wash.
Place bacon around the crust.
Make decoration if you like.
Step 4: Double Crust Apple Pie With Bacon
Put pie on a cookie sheet.
Place on middle rack of the oven and bake for 30 min, checking occasionally to ensure that the top is browning evenly.
Rotate the pie 180 degrees to move the front edge to the back of the oven.
Bake until the top is uniformly golden brown, 25 to 30 min.
Step 5: Double Crust Apple Pie With Bacon
Remove pie from oven and let it cool for 20 min before slicing and serving.
Enjoy with ice-cream or just leave plain
