Introduction: EASY LASAGNA FOR TWO

There are just the two of us, Wifey and me. **singing** I do the cooking, honey, I pay the rent ... sorry, just burst into song there for a minute. And on top of that, Wifey is a very fussy eater. She likes her lasagna simple. Not too much ricotta, no fillings other than the sauce straight out of a jar. But for those of you who do like all that stuff, just add it. This a very simple and basic recipe that can be adapted for any amount of people eating the kind of lasagna they like.

Step 1: INGREDIENTS

Lasagna noodles, the boiling kind, definitely not the oven-ready ones.

Ragu Old World Style Traditional Sauce

Parsley Flakes

Oregano

Garlic Powder

Black Pepper

Ricotta cheese

Shredded Mozzarella

Step 2: BOIL WATER

Cook lasagna noodles per direction on box. Drain noodles when done

Step 3: 8 X 8 BAKING DISH

Cover the bottom of the 8 x 8 baking dish with a layer of sauce.

Step 4: RICOTTA AND SPICES

Add several dollops of ricotta cheese and add the spices to taste on top of that.

Step 5: LAYERING

You can see by the pictures that the 8 x 8 dish is perfect for two lasagna noodles per layer. I usually cook 8 noodles for 4 layers. On each layer add sauce and mozzarella. Load up that last layer with mozzarella.

Step 6: COVER WITH FOIL

When covering with aluminum foil, make sure you leave the foil poofy, like Seinfeld's Poofy Shirt, making sure it doesn't touch the cheese. Or else the cheese will stick to the foil. Cook at 375 for about 45 minutes, shut of the oven about 20 minutes before eating, but leave the lasagna in the oven. This gives the lasagna time to settle. It's too hot to eat right from the oven.

Step 7: MANGIA

Remove the cats from the table. Serve. Enjoy.

Like I said, simple, uncomplicated, easy. You may make this as difficult as you want. Have fun.
