This recipe is to make cheesy corn chips which are easy to make, delicious and healthy, picky eaters don't know or care they are eating a lot vegetables, using food dehydrator.
4 cups whole kernel corn, steamed
4 cup sharp cheddar cheese, grated (the ready grated cheese is not as satisfactory)
2 cup red peppers or spinach
4 tbsp onions, chopped
1/2 tsp cayenne pepper (optional)
1/2 tsp chili powder (optional)
salt to taste (optional)
Please keep in mind the amount in this recipe is for Nesco Dehydrator with 4 trays. If you have more than 4 trays, you can scale it up.

Step 1: Make Your Own Fruit Roll Sheets
Suppose there are fruit roll sheets you can use to dry paste. Unfortunately, the ones I picked up from the store didn't fit in the trays, although they were made by the same company. So I had to make my own fruit roll sheets.
Place parchment paper over a tray, use a pencil to trace along the tray edge and the center hole.
Cut inside the edge pencil mark and outside the center hole pencil mark so no pencil mark will come in contact with your food and contaminate it.
Make one sheet for each tray.
I also made one sheet out of pattern tracing paper to use as a pattern, so I don't need to trace the tray again later.
Step 2: Combine and Blend All Ingredients
Step 3: Spread the Paste Evenly on 4 Trays
Spread the paste evenly on 4 trays lined with parchment paper you just made. Close and turn on the dehydrator.
Step 4: First Stage Dehydration
Let it on for several hours or until the paste become leathery.
Remove the sheets from the tray.
Cut them into whatever sizes and shapes.
Remove parchment paper from trays.
Put the cut chips back on the trays.
Step 5: Second Stage Dehydration
Dehydrate the cut chips with parchment paper removed until crisp or to a texture you like.
Now that isn't hard at all. The hardest part is you can never keep up with the speed these chips disappear.
