About: I'm a 49 year old Systems Architect living in the Midwestern United States. After travelling the world for 20 years as a consulting architect I became disabled, as a result, I am now embracing a Slow life. ...

Sometimes you just feel like throwing some things in a pot and letting it cook while you go about your busy day. This is definitely one of those recipes. You literally just throw it all in the slow cooker and let it go.

  • 1 12 oz box pasta (I used spinach rotini)
  • 1 small red onion, diced
  • 1 28 oz can diced tomatoes
  • 1 tsp oregano
  • 1 - 1 1/2 lbs ground beef
  • 1 1/2 - 2 cups of shredded cheese (your choice, I used co-jack)
  • 1-2 cloves garlic or garlic scapes (I used some scapes I cut yesterday)
  • Salt and pepper, to taste

Cooked it yesterday, had to add a little water because the pasta dried out, but it did cook for about 9hrs (long day at work) also substituted ground turkey.

The family all enjoyed it very much. Thanks for the recipe!

I've found the pasta is really sensitive to the amount of liquid in the tomatoes...sometimes it helps to add a can of tomato soup or double up on the diced tomatoes.
